Simple quinoa meal: low carb lunch for work

I’ve made an incredible tasty low carb lunch for work as I was a prisoner in my own house last week.

Ow girls… When comes to the weather, it was not a pleasant week last week. There was a sand storm sweeping across the Middle East and Israel was completely covered by this sand cloud. When I woke up in the morning and opened the shades in my sleeping room I would see a yellow filter in front of my eyes. I was wondering if I was not still half-asleep. It was something I have never seen before. It seemed to be a big yellow dusty fog. In no time, the furniture and the floor were covered with dust…

My boyfriend had to go to the army for one week. And there I was, having to close all the doors and windows. It was so warm in our apartment and to make matters worse, our airco broke down. I couldn’t go the supermarket and also couldn’t jog the whole week. It felt like I was living in a prison.

One becomes very creative when there are only a few options. I created a super simple Quinoa dish Italian style. I found a mozzarella ball and some fresh tomatoes in my fridge and thought about how to make a low carb lunch for work. Well this is what I created:

Quinoa with Italian herbs and mozzarella, low carb lunch for work:

  • Quinoa for one person
  • 1 mozzarella ball
  • Half an onion
  • 3 garlic cloves
  • 2 fresh tomatoes
  • Tea spoon dried basil
  • Tea spoon dried oregano
  • Tea spoon dried garlic
  • Olive oil
  • A bit of salt
  • A bit of black pepper

Optional: truffle oil

Optional: chili pepper

Prepare the quinoa as per usual. Fill half a regular drinking glass with quinoa, place it in a pot and add twice as much water (the ratio is 1 cup of uncooked quinoa to 2 cups of liquid). After 20 minutes it should be ready. Check if you can recognise the C in the middle of the quinoa seed. Fry the onion and garlic cloves in the olive oil, add the tomatoes and the quinoa. Add the dried basil, dried oregano, salt and pepper. Take it out of the pan and scoop it up your plate. Cut the mozzarella on top of the dish and add some truffle oil to it,should you have truffle oil at home. You can a little bit chili peppers to it to intensify the taste. There is your low carb lunch for work or not for work. Bon appétit!
