Hey all, so this is my favourite salad: beetroot salad with mayonnaise. It is super low budget and extremely tasty. In the Surinamese community in the Netherlands this salad is really popular. It has such a happy colour and is very easy to make. This salad has no gluten. So now I will teach you how to make a beetroot salad with mayonnaise. It is excellent party food to serve your guests!
Ever since I have lived in Israel I have really missed my mother’s cooking. But making some food from the Suriname kitchen reminds me of home! I will share with you my favourite recipe!
1 Hard boiled egg
3 Beetroots (I buy them vacuum packed)
250 gr. Chicken fillet
To prepare the chicken
Cook the chicken for 25 min in water, take the chicken out and pick the chicken with your hands until you get fine pieces. You should fry the chicken in a bit butter or oil in 1 spoon of soup powder.
To prepare the rest of the salad:
Cook the potatoes (+- 30 min) until they are soft enough. When they are soft enough mash the potatoes together with the 3 beetroots, 3 spoons of mayonnaise, some corn, 3 pickled cucumbers, a bit salt and a bit of black pepper. Mix it all with 2 big spoon and there is your party dish! Before you serve it to your quests garnish it with slices of boiled egg and place the salad on top of a lettuce leave.
