This week I will show you how to make a delicious curry paste. To make it a healthy and extremely tasty curry paste, I will make the curry paste from scratch with yellow curry ingredients.
What I love about this dish are the colors, the smell and the taste of all ingredients coming together in this big dish of happiness!
So lets start with the yellow curry ingredients:
- 4 red peppers
- 1 stalk of lemon grass
- 4cm fresh ginger
- 2 big onions
- 2 spoons of olive oil
- 8 cloves of garlic
- the husk of 2 lemons
- 1 teaspoon shrimp paste
- 25 gram coriander
- ½ teaspoon coriander powder
- turmeric 1 teaspoon
- cumin seed 1,5 teaspoon
- little bit of salt (optional)
Put all these ingredients in the blender until it becomes a thick paste.
You can keep the curry paste in the fridge for 2 weeks.
The curry paste is really nice to combine with meat, fish or just with veggies. And for some extra flavor add coco milk to the curry paste.
To finish this tasteful dish with yellow curry ingredients, put some fresh coriander leaves on top.
